Tuna Sandwich

Ingredients
- 2 6oz cans of solid white tuna in water
- 2 tbls of juice from lemon
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 celery rib, minced
- 2 tbls minced red onion
- 2 tbls minced dill or sweet pickles
- 1/8 tsp pressed garlic
- 2 tbls fresh parsley, minced
- 1/2 cup mayonnaise
- 1/4 tsp dijon mustard

Preparation
Step 1
1. Drain the tuna in a colander and shred with your fingers until no clumps remain and the texture is fine and even.
2. Transfer the tuna to a medium bowl and mix in the lemon juice, salt, pepper, celery, onion, pickles, garlic, and parsley until evenly blended.
3. Fold in the mayonnaise and mustard until the tuna is evenly moistened (the salad can be covered and refrigerated for up to 3 days).
NOTE: Break tuna with fingers in colander and let drain (fine even texture). Studies show that Starkist solid white tuna is best. The order of seasoning makes a difference... all ingredients except mayo mixed first.
