Ingredients
- 3 lbs potatoes
- 1 cup chicken broth
- 2 Tbsp fresh lemon juice
- 1/4 cup melted butter ( no substitutes )
- 1 tsp oregano
- 1 Tbsp fresh minced garlic
- salt & pepper
- 1/2 - 3/4 cup grated parmesan cheese
- chopped fresh parsley

Preparation
Step 1
Set oven to 375 degrees
Butter shallow baking dish
Peel & cut potatoes into large wedges & place into baking dish
In a bowl combine the broth,lemon juice, butter, oregano, salt, pepper, & garlic, mix well to combine.
Pour over potatoes & stir to mix well.
Cover dish TIGHTLY with foil.
Bake about 40 minutes.
Uncover & turn potatoes.
Sprinkle with parmesan cheese & return to oven UNCOVERED .
Bake for another 20 - 30 minutes or until tender.
Sprinkle with chopped fresh parsley & serve.
NOTE , the parmesan may be sprinkled on just after baking if desired .
