- Topping:
- 4 tbsp oleo or butter
- 4 tbsp flour
- Speck pepper
- 1/2 tsp salt
- 1 c milk
- 1/2 lb. (8 oz) Cheddar Cheese, cut into cubes
- 2 cups Elbow Macaroni, cooked
- 1/2 c Shredded Cheddar Cheese
- 1 tbsp oleo or butter
- 1/4 c cracker crumbs or bread crumbs
- 2-qt casserole dish

Step 1
Preheat oven 350 degrees
Cook macaroni according to package directions. Set aside.
In saucepan over low heat, melt oleo
Add flour, pepper, and salt; stir until blended smooth.
Slowly add milk, stirring constantly to avoid lumps
Cook, stirring, until smooth and thickened.
Add Cheddar Cheese, cook 3 minutes or until melted, stirring frequently.
Pour macaroni into a 2-qt casserole dish sprayed with cooking spray.
Spoon cheese mixture into dish and mix well
Sprinkle with Cheddar
Melt remaining oleo; toss with cracker crumbs
Sprinkle over casserole.
Cover.
Bake 20 minutes or until heated through.
Makes 5 servings, 1 cup each.
