Ingredients
- 1 15-oz can artichoke hearts (in water or oil), drained and chopped
- 3/4 cup grated Parmesan cheese
- 3/8 - 1/2 cup light mayonnaise
- 3/8 - 1/2 cup light sour cream
- 1/4-1/2 teaspoon lemon pepper
- 2 skinless, boned chicken breasts, halved (4 half-breasts)

Preparation
Step 1
Preheat oven to 350 degrees.
Mix together the chopped artichoke hearts, grated Parmesan, mayo, sour cream, and lemon pepper.
Place the chicken pieces in a greased baking dish, being sure not to crowd them too closely together, since that would lengthen the cooking time.
Pour the artichoke sauce over the chicken. Bake for about 30 minutes, to an internal temperature of 165 degrees.
