Double Baked Mashed Potatoes

Ingredients

  • 2 1/2 pounds medium potatoes, peeled
  • 1 cup sour cream
  • 1/4 cup milk
  • 2 Tbsp butter, melted
  • 1 1/2 cups shredded Cheddar cheese, divided
  • 1/2 cup onion
  • 5 strips bacon, cooked and crumbled
  • 1/2 tsp salt
  • 1/8 tsp pepper

Preparation

Step 1

Place potatoes in large pot and cover with water. Bring to a boil. Reduce heat, cover and cook for 20 minutes or until tender. Drain.

In large bowl, mash the potatoes. Add sour cream, milk, butter, and 1 cup cheese. Stir in onion, bacon, salt and pepper.

Spoon into a greased 2 quart baking dish and top with remaining cheese.

Bake at 350 degrees, uncovered for 30-35 minutes or until heated throughly
