Italian Stuffed Beef Rolls

Ingredients
- 2 lb tenderized beef round steak cut into 8 pieces
- 8 (4 oz) thin slices smoked ham or turkey
- 8 (3 in) pieces green onion
- 1 tbsp olive oil
- 1 can (12 oz) tomato paste
- 1 tbsp chopped fresh sage, basil or a combination of both, crushed
- 2 tsp chopped frsh thyme
- 1/2 tsp sugar
- 1/4 tsp salt

Preparation
Step 1
1. Season beef with salt and pepper, if desired. Place slice of ham or turkey and green onion of each piece of beef. Roll up; secure with wooden pick.
2. Brown beef rolls on all sides in hot oil in large skillet over medium heat. remove rolls to 2 qt oblong baking dish. Stir together tomato paste, 1-1/4 cup water, herbs, sugar and salt; pour over beef rolls.
3. Cover and bake at 350 degrees F for 1 hour. Uncoverand spoon sauce over rolls. Bake uncovered about 15 minutes more or until beef is tender and sauce slightly thickened.
4. Slice rolls, if desired. Serve with your favorite side dish.
