T-Bone Steaks With Balsamic Onion Confit

  • 1 Tbsp. Unsalted Butter
  • 3 Lg. Onions, peeled & sliced 1/2'" thick
  • 3 Tbsp. Balsamic Vinegar
  • 3 Tbsp. Honey
  • 4 (14oz.) T-Bone Steaks
  • 1/2 tsp. Salt, plus a pinch
  • 1/2 tsp. Freshly Ground Black Pepper

Step 1


To make confit: Melt butter in a lg, non-stick skillet over med heat. Add onions, pinch of salt & 1 C. water. Cook for 20 min, stirring often till water evaporates & onions are softened. Stir in another cup of water. Cook 20 min. more, stirring often, till water evaporates & onions begin to brown. Add vinegar & honey. Cook for 10 min, stirring often, till onions caramelize. Set grill on high. Season steaks with salt & pepper. Lightly oil grill & turn to med. Place steaks on grill & cover. Grill 3 1/2 min on each side for med-rare. Transfer each steak to a dinner plate; top with onions & serve.
