Peach Cobbler

This is my all-time favorite cobbler recipe. The batter puffs up and surrounds and covers the fruit. Best served warm with half and half poured over.

Ingredients
- 1/2 cup softened butter
- 1 cup sugar
- 2 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large can peaches, plums or other fruit can be substituted
- 1/2 to 1 cup sugar
- 2 cups juice from fruit

Preparation
Step 1
Cream together butter and sugar until fluffy. Mix in sifted dry ingredients alternately with milk. Beat until smooth. Pour into a 9X13-inch pan.
Spoon fruit over batter. Mix sugar and fruit juice to taste and pour over top.
Bake 30 minutes or until golden brown in 375 degree oven.
