Szechwan Shrimp

Ingredients

  • 30 -shrimps
  • 1-1/2 tsp cornstarch with 1-1/2tsp.water
  • 1/2 C. salsa
  • 1/4 C. honey
  • 2 TB. each of soy sauce, chunky peanut butter,dijon mustard
  • 1/2 tsp. ginger
  • 1 can corn cobettes, drained
  • 1 C. snow pea pods
  • 4-5 C. cooked white rice

Preparation

Step 1

Dissolve cornstarch in water, set aside
Combine salsa, honey, soy sauce , mustard, peanut butter and ginger ina saucepan. Bring mixture to a slow boil, stirring to blend.
Add the dissolved cornstarch stir and cook until mixture is thickened. Gently stir in the cobbettes and snow peas. Add cooked shrimp heat for 2 min.
Serve over rice
