Baked Lemon Chicken

  • 1/3 c. lemon juice
  • 1/4 c. reduced-sodium soy sauce
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. gr. ginger
  • 1/4 tsp. pepper
  • 2 lbs. skinned, boned, chicken breasts
  • cooking spray

Cooking time 60mins


Step 1

Stir first 6 ingredients. Add chicken and marinate in plastic bag in refrigerator 2-3 hours, turning once.
Drain and discard marinade, then transfer chicken to the rack of a shallow roasting pan coated with cooking spray. Bake about 1 hr. at 325 deg. or until done. Cut into 2 oz. slices.
