Ingredients

  • 2 half chicken breasts, skinned and boned
  • 1 tablespoon vegetable oil Crisp lettuce leaves
  • 1 small cucumber, sliced
  • 1 orange, peeled and sliced
  • 2 clusters seedless grapes
  • 1/2 red bell pepper, sliced
  • 1 banana, peeled and sliced
  • Peanut dressing
  • 1/4 cup orange juice
  • 2 tablespoons peanut butter
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon grated ginger root
  • 1/2 teaspoon garlic powder 1/8 teaspoon crushed red pepper flakes

Preparation

Step 1

Combine all dressing ingredient
Marinate chicken in 2 tablespoons dressing for 30 minutes. Salt and pepper the chicken to taste.
Sauté chicken in hot oil until done.
Line 2 salad plates lettuce. Arrange chicken on lettuce. Surround with cucumber, orange slices, grapes, red pep- per and sliced banana. Serve with peanut dressing.
Makes two servings.
