Ingredients

  • 1 onion, sliced
  • 1 lb. button mushrooms, sliced
  • 1/2 stick + 1/2 stick margarine
  • 6-8 pieces boneless skinless chicken thighs and breasts
  • 1 c. all purpose flour
  • salt and pepper
  • 1 c. dry white wine
  • 1 c. chicken broth

Preparation

Step 1

Preheat oven to 350. In a large skillet, melt 1/2 stick margarine and saute mushrooms and onions until most of the liquid from the mushrooms has evaporated. Remove from pan. Season flour with salt and pepper. Lightly flour chicken. In the same skillet, melt 1/2 stick margarine and brown chicken on both sides. Remove chicken and place in a shallow baking dish and top with sauteed mushrooms and onions. Deglaze pan with wine and chicken broth. Pour over chicken and bake covered at 350 for 1 1/2 hours.
