Moose's Cabbage Soup

This recipe was adapted from The Giant Cabbage by Cherie B. Stihler. Moose grows a giant cabbage to take to the fair, but finds it is too big to move! With the help of his friends, he finally succeeds, and makes a giant pot of
this delicious soup to share. (This recipe is a variation of the one from the website and one from a printed recipe card I found).
Ingredients
- 3 quarts chicken or vegetable stock
- 4 tbsp butter
- 2 large onions, diced
- 1 clove garlic, minced
- 1 large head of green cabbage, quartered and chopped
- 1 lb unpeeled potatoes, cubed (russet or red)
- 1 lb carrots, sliced in 1/4-inch rounds
- 1/4 cup dried parsley
- 2 tbsp dried oregano
- Salt, to taste
- Pepper, to taste

Preparation
Step 1
In a giant soup pot, bring stock to a boil.
In a 12" frying pan, melt butter and sauté onion until golden, about 5 minutes. Add to soup pot, along with any butter remaining in the pan.
Add remaining ingredients, including any additional vegetables of your choice and cover with water or additional stock.
Simmer over low heat, stirring occasionally, until the carrots are soft and the potatoes are cooked, about 2 hours. Add salt and pepper to taste before serving.
Serve with a nice cheddar cheese, some crusty bread and a good story.
