Pineapple Coffee Cake

Ingredients
- 1 can pineapple chunks
- 1/2 c packed brown sugar
- 1 tsp. cinnamon
- 1/2 c walnuts (chopped)
- 3 T butter (diced)
- 2 c baking mix (Bisquick)
- 2 T sugar
- 1 egg (lightly beaten)

Preparation
Step 1
Drain pineapple reserving 2/3 c juice. Pat pineapple dry. Mix brown sugar, cinnamon, walnuts and butter in medium bowl. Set aside. Beat reserved juice with baking mix,sugar and egg in large bowl. Spoon into 9 inch round baking pan sprayed with cooking spray. Top with half the walnut mixture, pineapple and remaining walnut mixture. Bake at 400 degrees 20-25 minutes. Cool and serve
