Cheesy Broccoli Soup

Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 1 1/2 tbsp low fat margarine
  • 2 tbsp flour
  • 3/4 cup 2% milk
  • 4 1/2 cup water
  • 1 package veggie stock mix
  • 130 grams velveeta cheese
  • lots of broccoli

Preparation

Step 1

Saute the onion, celery and carrots in margarine in a large pot.
Sprinkle in the flour once veggies are soft and mix until coated. Mix together the water and stock mix and add to the pot. Bring to a slow boil. Add milk and broccoli. Cube the cheese and throw in the soup. The soup is ready when the cheese is dissolved and broccoli is tender. Add salt and pepper.
