Broccoli, cheese and Egg Muffins

Breakfast muffins with broccoli, cottage cheese, cheddar and parm cheese made with egg.

Ingredients

  • 1 cup chopped broccoli (microwaved for 3 minutes to slightly cook)
  • 10 eggs (for 12 muffin pan-silicone)
  • 1/2 cup cheddar
  • 1/2 cup parm
  • 1/2 cup cottage cheese (separated for 12 muffins)
  • seasoning to your liking
  • 1/2 cup ham or other breakfast meat of your choice

Preparation

Step 1

preheat oven to 375, cook 30-35 minutes until top is slightly browned
cook broccoli and divide among 12 muffins in muffin pan (pre-greased)
chop ham and divide among 12 muffins
add cheese, spreading out evenly for all muffins, on top of broccoli and meat in muffin pan
beat eggs well and add seasonings to your liking
poor beaten eggs in each muffin to 2/3 full
use fork to slightly stir each muffin
before putting in oven add one dollop of cottage cheese to each muffin, stir if you like
