Swiss Turkey Noodles

Ingredients
- 4 slices of bacon
- 1/2 cup diced red pepper
- 4 oz sliced mushroom
- 1/4 of an onion, diced
- 1/2 tsp thyme
- 12 bag homestyle egg noodles
- 1 cup turkey, chopped
- 1 cup shredded smoked swiss cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp cornstarch
- 2 cups half & half

Preparation
Step 1
Cook doodles according to pkg directions.
In large skillet, cook bacon until crisp. Drain and crumble. Reserve 1 tbsp of bacon drippings in skillet. Add red peppers, mushrooms, onions, thyme, salt and pepper. Cook 3-4 minutes or until tender.
In small bowl, combine cornstarch and half & half, add to skillet. Bring to a boil, simmer until slightly thickened. Add noodles, turkey and cheese. Stir until melted.
Sprinkle each serving with bacon.
