Mini Crab Cakes with herbed aioli

Ingredients

  • crab cakes:
  • 1/2 c mayo
  • 2 tsp fresh chives, chopped
  • 2 tsp fresh parsley, chopped
  • 2 tsp fresh lemon juice 1 garlic clove, minced
  • 1/4 c red bell pepper,finely chopped
  • 1 tbs fresh chives, chopped
  • 1 tbs fresh parsley, chopped 3 tbs mayo
  • 2 tsp dijon mustard
  • 2 tsps fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1/2 tsp freshly ground black pepper
  • 3/4 panko crumbs
  • 1 lb lump crabmeat
  • 1 tsp canola oil

Preparation

Step 1

Preheat oven to 350 degrees.
Combine first 5 ingredients for aioli in small bowl and set aside.
Combine bell pepper and next 7 ingredients in a large bowl. Stir well with a whisk. Add panko and crabmeat and toss gently. Divide the crab mixture into small crab cakes, shaping each about 1 inch thick.
Heat oil in large ovenproof skillet coated with cooking spray over medium-high heat. Add patties and cook for 2 minutes each side. Place skillet in oven and cook about 6-8 minutes. When are golden color they are ready.
