Ingredients

  • Crust:
  • 1 c. flour
  • 1/4 c. powdered sugar
  • 1/2 c. melted butter
  • Lemon custard:
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1/2 tsp. baking powder
  • 3 Tbsp. lemon juice
  • 2 eggs

Preparation

Step 1

Preheat oven to 350.

Crust:
Mix ingredients and press into bottom and 1/2 inch up the sides of an 8x8 pan. Bake at 350 for 20 minutes.

Lemond custard:
Beat together ingredients until smooth and pour over baked crust. Bake at 350 for another 25 minutes.

Sprinkle immediately with powdered sugar and cut into squares.
