French Onion Soup

Ingredients

  • 1/2 stick butter
  • 1 tbsp Olive oil (not extra virgin)
  • 3-4 large Vidailia Onions, sliced thin
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp flour
  • 8 c beef stock
  • 1/4 c cognac or brandy
  • 1 cup dry white wine
  • French bread slices, toasted
  • Cheese grated coarsely (swiss/provolone/gruyere)

Preparation

Step 1

Start stock heating in saucepan. Heat butter and oil together in large pot. Stir in onions (gently)when melted. Cover and cook slowly until translucent ~10 MINS.
Mix salt and sugar in small bowl, and gradually fold into the onions. Increase heat to med-high and carmelize the onions (slowly brown), folding gently to stir. Color should be light-medium brown.
Sprinkle on the flour and continue to cook for 3-4 minutes while gently folding. Remove from heat and let cool 3-4 minutes. Gently whisk in 2 cups of hot stock, then bring to a simmer. Add cognac and wine. Cover loosely and simmer 1.5 hours. Salt, cognac and pepper to taste.
Place soup in bowls with toasted bread on top. Sprinkle grated cheese on and broil until cheese is golden brown.
