Lazy Beef Potpie

Ingredients
- Small bag petite carrots
- 5 celery stalks, chopped
- 1 15 oz. can low sodium beef broth
- 1/2 cup each, onion and bok choy, chopped
- 2 lbs. very small potatoes
- 3 lbs. top round pot roast, trim off fat
- 1 teaspoon Kosher salt
- 1 teaspoon each pepper, sage, ground mustard
- 32 oz. pasta shells

Preparation
Step 1
Place all ingredients, except shells, into a 5.5 quart crock pot. Add 4-5 cups water until ingredients are covered and cook on slow for 8 hours, stirring occasionally. Turn off crock pot and add shells, stirring them into the liquid and let sit for 30 minutes. They should soak up the excess liquid and the mixture will look and taste like potpie.
