Apple oatmeal muffins

  • 1 c rolled oats
  • 1 c flour
  • 1/3 c sugar
  • 3 t baking powder
  • 1 t salt
  • 1 t nutmeg
  • 2 t cinnamon
  • 1/2 c raisins
  • 1/2 c chopped walnuts or pecans
  • 1 egg beaten
  • 1 t vanilla extract
  • 1/2 c oil
  • 3/4 c milk
  • 1 large apple grated - about 1 cup

Step 1

Preheat oven to 400 degrees. In a bowl, combine oats, flour, sugar, baking powder, salt, nutmeg, and cinnamon. Mix well. Add the raisins and nuts and mix.

In a separate large bowl, combine eggs, oil, vanilla, apple, and milk. Add dry ingredients to this mixture and stir just until moistened.

Pour into greased muffin cups or use paper liners. Bake at 400 degrees for 15 minutes just until tops are browned.
