Tortellini Broccoli Salad

  • 1 (12 oz.) package refrigerated cheese tortellini
  • 5 slices thick sliced bacon
  • 2 crowns fresh broccoli, cut into bite size pieces (4 cups)
  • 1/3 c. red onion, diced
  • 1/2 c. dried cranberries
  • 1/3 c. light mayo
  • 1/3 c. light sour cream
  • 1 T. balsamic vinegar
  • 1 T. white sugar
  • 1/3 c. chopped walnuts



Step 1

Cook tortellini according to package directions. Cool and set aside. Meanwhile, Cook bacon until crispy; drain on paper towel; crumble and set aside. In a small bowl, stir together mayo, sour cream, vinegar and sugar. Mix well. Mix all ingredients together then add mayo mixture. Refrigerate for at least 2 hours or more.
