Blueberry (or apple) muffins
Sweet muffin recipe from Peg Horne
- 1 egg - can use egg sub
- 1/2 c milk
- 1/4 c oil
- 1 1/2 c flour
- 1/2 c sugar
- 2 t baking powder (or 1 t. soda)
- 1/2 t salt
- 1 c fresh or 3/4 c frozen blueberries thawed
- 1 c grated apple with oil and 1/2 t cinnamon with flour
Beat egg. Stir in milk and oil. Mix in dry ingredients just until moist - will be lumpy.
Bake at 400 degrees 20 minutes.
Makes 12 muffins - grease bottom of cups. If not everyone in the family likes blueberries, it is easy to make the batter in two batches and put blueberries in half and apple in the other half, still yielding 12 muffins.
