Olive Oil & Herb Mashed Potatoes

Ingredients
- 5 lbs. potatoes (peeled & cut in half)
- 3/8 tsp. white pepper
- 1 1/2 T kosher salt
- 1/2 c Tuscan Herb Paste (see recipe below)
- 12 c. olive oil
- 1 c heavy cream (warmed)

Preparation
Step 1
Boil potatoes in water until fork tender. Drain and mash. Mix pepper and salt with Tuscan Herb paste, olive oil and warm cream. Fold into potatoes.
Tuscan Herb Paste:
1 T fresh basil
2 T rosemary
1/2 c. packed parsley
1 T thyme
2 T sage
1/2 tsp. crushed red pepper
3/4 c. extra light olive oil
1 c. Extra Virgin Olive Oil
Blend herbs and red pepper with light olive oil using a blender, then stir in extra virgin olive oil.
