Roasted Cedar Plank Salmon

Ingredients
- Cedar plank*
- Olive oil, for brushing plank
- 1 whole salmon filet, skin removed
- 1/4 cup Dijon mustard
- 2-3 tablespoons dried dill
- 3 tablespoons brown sugar
- Salt and pepper, to taste

Step 1
Preheat oven to 400°F. Once warmed, place cedar plank directly in the oven for 5-10 minutes. Remove from oven, place on a baking sheet and brush generously with olive oil.
While the cedar plank warms, season both sides of salmon filet with salt and pepper. Transfer to prepared cedar plank, spread the top with Dijon mustard, then sprinkle with dill and brown sugar.
Roast until almost cooked through, about 15-20 minutes, then set oven to broil and cook until the top is golden brown and bubbling, about 5 minutes. Serve immediately
