Crispy Shrimp Dippers

Ingredients
- 1/2 c. mayonnaise
- 3 tsp. Cajun seasoning
- 1/4 c Thousand Island dressing
- 3 T roasted red peppers
- 3 T scallions
- 2 tsp. lime juice
- 1 c plain Panko bread crumbs
- 1 1/4 lbs. large shrimp. (cleaned but tails on)

Preparation
Step 1
Heat oven to 400 degrees. In bowl, blend 1/4 c mayonnaise, 2 tsp. Cajun seasoning and next 4 ingredients. Set aside. In separate bowl, mix bread crumbs and remaining seasoning. Using pastry brush coat shrimp with remaining mayonnaise, then bread crumb mixture. Spray shrimp with cooking spray and place on greased baking sheet. Bake 10 minutes or until golden brown. Serve with sauce.
