Ingredients

  • 1/2 c. rice vinegar
  • 2 T sugar
  • 2 T fresh lime juice
  • 2 T minced fresh ginger
  • 1 hot red chili, minced (1 1/2 T) or 1/4 tsp red pepper flakes
  • 1 T toasted sesame oil
  • 3 cucumbers peeled, seeded and cut into 1/4" slices
  • 4 scallions, white and green parts sliced dthined
  • 1/4 c. packed fresh basil leaves, chopped
  • S&P to taste

Preparation

Step 1

Bring vinegar and sugar to boil in saucepan. Reduce heat to medium low and simmer till mixture reduces by half. 5-6 minutes. Transfer to medium bowl and cool to room temperature.

Whisk in lime juice, ginger, chile and sesame oil. Toss in cucumbers, scallions, and basil. Season to taste with S& P and let rest before serving.
