  • 2 packages cornbread mix
  • 12 slices American cheese
  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 1/2 medium bell pepper, chopped
  • 2 jalapenos, sliced (optional)

Step 1

Mix cornbread batter as directed on package.

Heat oven to 425 degrees. Spray a 13x9 inch pan with oil.

Brown meat with onion and bell pepper in skillet. Add salt and pepper to taste. Drain and set aside.

Pour half of the cornbread batter into pan. Place six slices of the cheese over the batter.

Spread the meat evenly over the cheese. Pour the rest of the batter on top.

Top with remaining slices of cheese. Pour the rest of the batter over the top.

Bake for 20 to 25 minutes or until brown on top. Let cool for about 10 minutes.
