French Onion Soup

Ingredients

  • 1 T olive oil
  • 3 large red onions (thinly sliced)
  • 3 sprigs fresh thyme
  • salt and pepper
  • 1/2 c. dry red wine
  • 1 can chicken broth
  • 2 1/2 c water
  • 2 tsp. soy sauce
  • 4 slices whole wheat baguette
  • 1 tsp. corn starch
  • 1 1/4 oz. Gruyere cheese
  • 4 slices Swiss cheese

Step 1

In large sauce pan heat oil. Stir in onions, thyme and 1/4 tsp. salt. Cover partially and cook 15-17 minutes or until onions are golden brown. Add wine and simmer 2-4 minutes or until reduced by half. Add broth, water, and soy sauce. Heat to boiling then reduce to maintain a gentle simmer. Simmer 20 minutes.

Arrange oven rack 6 inches from broiler source. Preheat broiler. Place bread slices in jelly roll pan. Broil 30 -60 seconds or until golden brown. Divide into 4 separate ovenproof bowls or soup crocks.

In small bowl stir corn starch and 1 T soup liquid until corn starch dissolves. Stir into soup and simmer. Stir is 1/4 tsp. pepper. Discard thyme. Divide soup into crocks. Sprinkle Gruyere over evenly than place 1 slice Swiss on top of each crock. Broil 2 minutes or until golden brown . Serve hot.
