EASY PINEAPPLE UPSIDE-DOWN CAKE

This classic favorite has made a comeback and it's easier than ever to make when using a cake mix.

Ingredients

  • 1/4 cup butter or margarine
  • 1 cup packed brown sugar
  • 1 can (20oz)pineapple chunks or tidbits in juice, drained and reserve juice
  • 1 jar( 6oz)maraschino cherries without stems, drained
  • 1 box yellow cake mix (you can also use "butter recipe" or "white" cake mix instead of yellow)
  • vegetable oil and eggs as called for on cake mix box

Preparation

Step 1

Preheat oven to 350 degrees.
In 13x9inch pan, melt butter in oven.
Sprinkle brown sugar evenly over melted butter.
Arrange pineapple on top of brown sugar.
Place cherries here and there in between the pineapple.
Add enough water to reserved pineapple juice to make 1 cup.
Make cake batter as directed on box using pineapple juice/water mixture in place of the water.
Pour batter over pineapple and cherries.
Bake 42 to 48 minutes or until toothpick inserted in center comes out clean. Run knife around edges of pan to loosen cake. Place heat proof serving plate upside down over cake and turn plate and pan over . Leave pan over top of cake for 5 minutes so brown sugar topping can drizzle over cake, then remove pan. cool for 30 minutes. Serve warm or cool. Store covered in refrigerator.
