Mexican Corn Relish Calabacita
- 3 T. bacon dripping or butter
- 2 1/2 lbs zucchini (cut into 12 inch cubes)
- 1 pkg (10 oz) frozen corn (thawed)
- 1 red or green bell pepper seeded & chopped
- 1 med size onion (chopped)
- 2 cloves garlic (minced or pressed)
- salt & pepper
In a wide frying pan over med heat melt bacon dripping or butter.
Add zucchini, corn, bell pepper, onion and garlic; cook stirring often until most vegetable liquid has evaporated and are tender crisp (about 5 min)
Add salt and pepper to taste.
