Preparation

Step 1

1. Combine milk, reserved spinach liquid and garlic in a 1 quart measuring cup or microwave-safe bowl covered with a saucer
2. Microwave or heat slowly in medium saucepan until very hot and steamy. Let stand, covered, for 5-10 minutes to soften the garlic
3. Melt butter in a Dutch oven over medium high heat. Whisk in flour. Add hot milk mixture all at once , then whisk until smooth. Stir in spinach, and cook until sauce is thick and bubbly and spinach is tender but still green, about 5 minutes
4. Make ahead tip: turn onto large rimmed baking sheet to cool quickly, transfer to a covered container and refrigerate up to 2 days. Warm slowly over low heat
5. When ready to serve, stir in cheese, and season with nutmeg and a generous sprinkle of salt and pepper
