Crustless Broccoli & Cheddar Quiche

Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1 tablespoon Dijon mustard
  • 1-2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Fresh or dried parsley
  • 1 large head of broccoli, cut into florets and cooked
  • 2 garlic cloves, minced
  • 1/2 cup onion
  • Olive oil for cooking

Step 1

Preheat oven to 350 degrees

Bring a medium pot of water to a boil. Add broccoli. Cook 1-2 minutes. Drain well and pat down with paper towels.

Heat olive oil over medium high heat on a skillet. Cook garlic and onions for 2 minutes. Drain.

Spray the bottom of a glass pie pan with olive oil spray and place the mixture of broccoli and onion in it.

Whisk together eggs, milk, cheese, mustard, salt, parsley and pepper.

Pour the egg mixture into the pie pan.

Bake for approximately 45 minutes until the top of the quiche is golden brown.
