White Bean and Kielbasa Winter Soup

Ingredients

  • 1 qt. vegetable broth
  • 2 Tofurky kielbasas (vegetarian cause that's how I roll)
  • 1/2 large yellow onion
  • 2 fistfuls of red kale
  • 4 cloves of garlic
  • 1 can great northern white beans
  • 2 tbl spoons of olive oil
  • 7 small carrots
  • 2 portobello mushrooms
  • 2 large golden potatoes
  • 6 cups of water

Preparation

Step 1

In a large pot bring 6 cups of boiling water to a boil. Cut potatoes into 1/2 inch cubes and add to water -- allow potatoes to boil until the skin begins to peel off.

While potatoes are boiling: In a pan saute onions, garlic, mushrooms and kielbasas in olive oil (if using real sausage they will need to be browned separately).

Once potatoes have boiled add carrots, kale, white beans, broth and the saute. Also, add pepper, parsley and any other green or salty spices to taste. Allow the soup to simmer until carrots are softened (not mushy).

Serve and enjoy.
