Ingredients
- 1 15oz can cannellini beans, rinsed and drained
- 1/4 cup diced roasted red pepper
- 1 rib celery, diced (1/3 cup)
- 2 Tbs finely diced red onion
- 2 Tbs fresh parsley
- 1/4 tsp minced garlic
- 2 Tbs white wine vinegar
- 1 Tbs olive oil
- Black pepper to taste

Preparation
Step 1
Combine the first 6 ingredients in a medium bowl. Stir in vinegar, oil and black pepper. Toss until mixed. Refrigerate until ready to serve.
