How to make it
Set up the breading station first. Put the flour on a small plate. Whisk the eggs together in a small bowl. Combine the cornmeal with 1 tsp salt and pepper, put it on another small plate.
Heat a frying pan with about 1 inch of olive oil over medium high heat. While it is heating assemble the tomatoes.
Salt and pepper the tomato slices. First dredge a slice in the flour. Press it down to coat well on both sides. Then dip is quickly in the egg and then in seasoned cornmeal. Press into the meal.
Cook until golden brown on each side. Drain on paper towels and keep warm in the oven while making the sauce.
Sauce
Remove all but about a tsp of the frying oil from the pan. Add the onion and garlic. Season with some salt and pepper. Saute until tender.
Add the sausage and saute until it becomes fragrant.
Add the cream sauce and let simmer a couple of minutes.
Serve on the tomatoes.
