Honey-Glazed Chicken and Carrots

Ingredients

  • 3 cups uncooked egg noodles (6 oz)
  • 1 Tbsp olive or vegetable oil
  • 1 pkg (20 oz) boneless skinless chicken thighs (5 or 6 thighs)
  • 2 slices bacon, cut into 3/4 inch pieces
  • 1 medium onion, coarsely chopped (1/2 cup)
  • 2 cups baby cut carrots
  • 1/2 cup honey
  • 1/4 cup red wine vinegar
  • 1/2 tsp dried basil leaves

Preparation

Step 1

1. Cook and drain noodles.
2. In 12 inch skillet, heat oil over medium high heat. Cook chicken, bacon, onion and carrots in oil 8 to 10 mins., stirring occasionally and turning chicken until browned.
3. Stir in honey, vinegar and basil. Reduce heat to medium. Cover; cook 5 mins. Uncover; cook 5 to 8 mins longer, stirring frequently, until vegetables are tender and juice of chicken is clear when center of thickest part is cut (165 F). Serve over noodles.
