Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 cup sugar
  • 1 cup oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup chopped nuts

Preparation

Step 1

Sift dry ingredients together. Gradually add sugar to the oil, then beat well. Beat eggs until light, then add slowly to oil mixture and beat well. Gradually stir dry ingredients into the egg-oil mixture, then add the carrots and the nuts. Pour in 9 x 11 inch pan. Bake at 325 for 1 hour.

Icing

1 package cream cheese, ¼ - ½ cup butter, 2-3 cups icing sugar, 1 tsp vanilla. Mix well and spread on cake.
