  • 1/4 cup vegetable shortening, oil, or dripping
  • 1 cup yellow corn meal
  • 1 cup flour
  • 2 to 4 tbs. sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg, beaten

Preparation

Step 1

Heat oven to 400 degrees. In 8 or 9-in ovenproof square baking pan or 10-inch ovenproof skillet, melt shortening in oven ; tilt pan to coat bottom evenly. Combine dry ingredients. Add melted shortening, milk and egg; mix just until blended. Pour into hot pan. Bake 20 to 25 minutes or just until golden brown and wooden pick inserted in center comes out clean.
