Ingredients

  • 1.5 lbs Tilapia fillets
  • 3/4 cup Milk
  • 1 5-oz package Yellow Rice Mix
  • 1 15-oz can Black Beans, rinsed and drained
  • 1 Tbsp Butter
  • 1/3 cup grated Parmesan-Romano blend
  • 1/3 cup fine dry Breadcrumbs
  • 2 Tbsp Garlic-Bell Pepper Seasoning
  • 1/3 cup Vegetable Oil

Step 1

1. In a medium bowl combine fillets and milk. Cover and refrigerate 30 minutes. Meanwhile, cook rice according to package directions.
2. In a large saucepan combine cooked rice, beans, 1/4 cup water and butter. Cook over low heat, stirring occasionally, until heated through.
3. Meanwhile, in a shallow bowl stir together cheese, breadcrumbs and seasoning. Remove fillets from milk, discard milk. Dip fillets into breadcrumb mixture, coating generously.
4. In a large skillet heat oil over medium heat. Add fillets (in batches, if needed). Cook 6 minutes or until fish flakes easily with a fork, turning once. Serve with rice and beans.
