Ingredients
- Frosting:
- 1 package pineapple cake mix
- 1/2 cup oil
- 1 1/4 cups water
- 4 large eggs
- Variation: lemon or yellow cake mix
- 1 1/2 cups crushed pineapple, undrained
- 2 tablespoons sugar
- 1 (4 serving size)box French vanilla instant pudding mix
- 1 teaspoon vanilla
- 1 (8 ounce) container Cool Whip
- 1/2 cup coconut
- Variation: Substitute lemon or vanilla or pineapple instant pudding mix in place of French vanilla.

Preparation
Step 1
Preheat oven to 350 degrees.
Beat cake mix, oil, water, and eggs with electric mixer for 1 minute on low speed. Beat an additional 2 minutes on medium speed. Pour into greased and floured 9 x 13" pan. Bake about 35 minutes or until toothpick inserted in center of cake comes out clean. Cool.
Combine pineapple and sugar. Add pudding mix and vanilla. Mix well. Fold in Cool Whip. Spread on cooled cake. Sprinkle coconut on top of cake. Refrigerate.
