This is a fabulous dessert, elegant, tasty, easy and quick!
- 1 can apple pie filling
- 6 8 inch flour tortillas
- 2 teaspoons cinnamon, separated
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar, packed

Spoon filling down the middle of each tortilla. Sprinkle all with 1 tsp of cinnamon. Roll up and place seam side down in lightly greased pan. In med. saucepan melt butter, and add sugars and remaining cinnamon and bring to a boil. Reduce heat and simmer for 5 minutes. Pour over filled enchiladas. Let sit for 30 minutes. Bake in preheated oven at 350 degrees for 20 minutes.
