Sunny Rice Salad with Apples

Ingredients
- Salad:
- 2 cups cooked and cooled white rice
- 1 medium crisp apple, diced
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped carrots
- 1/2 cup chopped sweet onion
- 5 dates, chopped
- 1/3 cup sunflower seeds, preferably unsalted
- 1/4 cup chopped fresh parsley
- salt and pepper to taste
- Dressing:
- 1/4 cup apple juice or cider
- 1 T. fresh lemon juice
- 1 T. olive oil
- 1 t. all purpose seasoning (such as McCormick’s)

Preparation
Step 1
Mix all salad ingredients together in a large serving bowl.
Mix all dressing ingredients together in a separate bowl.
Pour dressing over salad and mix well.
Serve cold or at room temperature.
