Peach Marmalade Betty

A betty is a dessert that usually features layers of sugared, spiced fruit covered with a layer of buttered breadcrumbs. We added oatmeal cookie crumbs for a spicier topping. to get crumbs, pulse the cookies in a food processor.
Ingredients
- 5 cups thinly sliced peeled peaches (2 1/2 lbs)
- 1/2 cup sugar
- 1/4 cup orange marmalade
- 3 T orange juice
- 5 soft oatmeal cookies (Archway)
- 1 slice white bread
- 2 T melted butter
- cooking spray

Preparation
Step 1
1. Preheat oven to 350 degrees
2. Combine the first 4 ingredients in a large bowl.
3. Place the cookies and bread in a food processor and pulse 10 times until you have 1 1/2 cups coarse crumbs.
4. Combine cookie crumbs and butter, toss well.
5. Sprinkle 1/2 cup crumbs in bottom of a 2 qt casserole coated with cooking spray. Add peach mixture, sprinkle with remaining crumb mixture. Cover and bake at 350 for 25 minutes; uncover and bake for 15 minutes or until bubbly.
