- 1 rack baby-back ribs
- salt and pepper
- 1 can chipotle chiles in adobo
- 1/2 cup real maple syrup
- 2 tablespoons room-temperature butter

Step 1
Preheat oven to 275°. Season the ribs generously with salt and pepper on both sides. In a blender or food processor, combine chipotle chiles and maple syrup, and purée until smooth. With a pastry brush, baste ribs with chipotle-maple purée. Roast for 6 hours on a roasting rack over a drip pan, basting every hour until ribs fall off the bone and glaze is browned and delicious. During the last 30 minutes, increase the heat to 350° to create a beautiful crust.
