Ingredients
- 2 catfish filets, or tenders
- 1/4 cup freshly squeezed lemon juice
- oil for frying
- 1 tbsp seafood spice mix
- 1/4 cup yellow cornmeal
- (or Panko, or seasoned bread crumbs)
- 1/4 cup flour
- salt & pepper to taste
- mayonnaise

Preparation
Step 1
In a non-reactive bowl, place the fish and sprinkle with lemon juice.
In a cast iron skillet or high sided sauté pan, place about 1 inch of oil, heat on medium – high.
Using a rubber spatula or your fingers, rub a nice coating of mayo on the fish, covering it all.
Mix together till well blended the spice mix, flour and cornmeal. Place in bag.
Add a few pieces of fish at a time and shake till well coated.
Slide the fish carefully into the hot oil and cook till done.
Enjoy with a fresh squeeze of lemon, or tartar sauce.
