Ingredients
- 4 cups diced rhubarb
- 1/4 cup water
- 3 Tablespoons corn starch
- 1 1/2 cup sugar
- 1 teaspoon vanilla
- 1 1/2 cup rolled oats
- 1 cup brown sugar
- 1 cup butter softened
- 1 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon soda
- 2 cups coconut

Preparation
Step 1
1. Preheat oven to 350 degrees
2. Mix cornstarch and sugar in small bowl
3. In sauce pan place rhubarb and water. Then mix in sugar mix and cook at medium heat until thick. Stir in vanilla and cool slightly
4. Mix rest of ingredients in large bowl until crumbly.
5. Put 1/2 mixture in bottom of a 13X9 pan. Spread rhubarb filling on top then sprinkle remaining crumb mixture on top of rhubarb
6. Bake at 350 degrees for 30 minutes or until browned
