Ingredients
- 2 packages of frozen chopped spinach... defrost and remove all water
- 2 large eggs
- 2 green onions
- 2 Tb butter ... more for casserole dish
- Juice of half a lemon
- 1 cup grated parmesan cheese and a little more to sprinkle on top
- 1 cup heavy cream
- salt and pepper

Preparation
Step 1
Drop garlic into a food processor, run and it will mince. Then add the spinach, eggs, green onions, butter, parmesan, juice of lemon and maybe a little lemon zest. Run the processor a round or two. Add the cream and run until it all comes together. Add to your buttered dish/pan and bake at 350 for about 20 minutes. Right before removing from oven, top with a little more parmesan cheese and broil until golden brown on top.
