- 1 gallon cold water
- 1 cup salt
- Combine in large stockpot. Heat until salt is dissolved.
- Add 4oz of cracked black peppercorns, 6 bay leaves, 4 sprigs of rosemary, 1 cup brown sugar.
Stir until combined, cool to room temp. Place defrosted turkey in large plastic bag. Refrigerate 12-15 hr.
